Born in the Lower East side, il laboratorio del gelato is a landmark of frozen edible wonders. It’s also a lab for gelato experimentation, where this sky-blue hued scoop was invented. The tint comes from dried butterfly pea flowers ground to a fine powder-hard to believe, but this color really does exist in nature.
